With the warm humid weather and continual drizzle we have been experiencing in the North we have a glut of zucchinis in the garden.
I am always trying to think of different lunch ideas and piping hot corn fritters are a delicious memory from my childhood. This recipe is an old family favourite and a great way to smuggle extra vegetables into the kids.
1 tin of creamed corn
1 grazed zucchini zucchini- (best to get as much moisture out as possible).
1/2 cup of flour – roughly
1 teaspoon of baking powder
Salt and Pepper
Stir all the ingredients in together to a batter consistency and then cook in a a little oil.
Its as simple and delicious as that!
